Gluten-Free Natural Chemicals
When I walk the floor of the Natural Products Expo, I see a cross section of society. Little mom and pop operations going up against giant goliaths, all peddling their latest creations often with little if any research. The evidence is the “deer in headlights” response to even basic questions about their choice of ingredients. Later in natural foods stores, I catch myself scratching my head in wonderment over chickpea, rice, corn starch, modified cellulose, soy Protein, guar gum, carrageenan, locust gum, tapioca dextrin, rice extract, xylitol, xanthan, and other very unnatural sounding components.
